This is “LA PAPALINA” also called “bianchetto” or rice fish, a very small fish,
which is disappearing from our traditional fish cooking because of the new fishing European laws.
The fishing of the “papalina” was usually done with the “SCIABICA”, a very big fishing net made of thin mesh.
There were many different ways of preparing it, but the one I remember with pleasure are
the “Frittelle” prepared with a small quantity of flour, water, brewer’s yeast, a pinch of salt and fried in olive oil.
